Mojito Konnyaku Jellies

Mello Yello Jello.

Need to beat the summer heat? Have a Mojito…Jelly!

All you need:

  • 200ml Rum
  • 750ml Water
  • 8 tbsp brown sugar
  • Zest of 1 lime
  • Juice of 2 limes
  • 1 packet konnyaku powder
  • Handful of mint leaves

Zest the lime before you juice, it’s easier to get the zest off first. Chop the mint leaves fairly finely.

Mix the konnyaku powder with the sugar. Put the water on high heat and sprinkle the powder-sugar mix over the water, constantly stirring to dissolve it. Once the powder is all dissolved, bring it to a boil and turn off the stove. Still stirring, add the rum and lime juice and KEEP STIRRING until the bubbles disappear. At this stage, you should get a syrupy brown liquid in the pot/pan. Throw in the chopped mint leaves.

Pour out the mixture into molds or any other container you wish. Allow to set (5 minutes) and then refrigerate.

Serve very chilled!
